Tonight's Healthy Dinner

Cabbage Soup Deluxe

1 small onion, diced
4 cloves garlic, diced
2 carrots, diced
2 celery stalks, diced
2 lbs ground turkey (you could use one lb, but I wanted extra protein)
2 cans stewed tomatoes
2 cans white beans (Great Northern or Cannolini)
2 C chicken broth
1/2 head cabbage, shredded
garlic salt
Poultry Seasoning
Red Chili Flakes
Black Pepper

Saute onion, garlic, carrots and celery. Add in turkey and brown till done. Add the tomatoes, beans and broth. Bring to a boil and then add in the cabbage. Cook until wilted. Season to taste.

We ate ours with French Bread topped with spray butter and garlic, toasted under the broiler. Even The Bear loved it! He ate a whole bowl without complaint. That's saying something!
