Today's Healthy Lunch

Waldorf Chicken Salad

1 chicken breast, poached
1 small apple, diced
8 - 10 grapes, halved
1 stalk celery, diced
a few chopped walnuts
2 Tbs Plain or Vanilla Non Fat yogurt
2 Tbs Low or No Fat Mayo
a sprinkle of Splenda
a dash of Nutmeg

You can eat it on Whole Wheat Bread, or save the calories and eat it as a salad.
